I don’t look to jump over 7-foot bars: I look around for 1-foot bars that I can step over.
7-foot bars take a lot of effort to clear. And if you fail and then attempt another 7-foot bar, time is not on your side.
Success breeds success–even if the triumph is small. I’m not sure if I ever completed a task that could be considered “7-foot difficulty,” but I do know I’ve accomplished a lot of “1-foot difficulty” tasks. Those add up to significant feats in the long run. Books, songs, websites, and buildings are created this way.
Don’t go around looking for difficulty for difficulty’s sake. Find tasks that are well-suited for your skills and clear as many of them as possible.
